Bánh chuối Lục Yên (Luc Yen Banana Cake): Bananas that are ripe are peeled, dried, and then stored in pots. Banana leaves are used to wrap the cake, which is then cooked for 25 to 30 minutes. Typically, the cake is offered on full moon days or at ceremonial gatherings.
Muồm Muỗm Chiên (Fried Muom Muom) which resemble grasshoppers, are commonly seen in fields during harvest seasons. There are numerous dishes that contain “muom muom.” The best mum mum, though, is fried, say the locals. It becomes golden brown and has a lovely aroma when it is ready to be served, and it tastes infinitely crispy and greasy.
Gà nướng lá mắc mật (Grilled Chicken with Clausena Indica Leaf): The smell of roasted chicken wafting from the vendors at Mu Cang Chai Market will draw you in right away. Clausena indica leaves are put into the chicken’s abdomen along with seasonings, and the bird is then roasted over charcoal.
Bọ chiên giòn (Crispy Fried Bugs): Bugs that consume nectar and sap begin to appear on the inflorescences in April, when the longan flowers are in full bloom. Originally caught by residents in Van Chan to save their trees, these bugs are now a tasty ingredient. These bugs can be turned into a delectable dish by Yen Baicooks with a little lime juice and lime leaves.
