Cốm Hà Nội – The Royal Specialties of Hanoi

Cốm Hà Nội (Hanoi green sticky rice) is a traditional Vietnamese dish that originated in Hanoi in the early 20th century. The dish is made from young, immature rice grains that are roasted and then pounded into a fine powder. History

The exact origins of Cốm Hà Nội are unknown, but it is believed to have been created by farmers in Vong village, which is just outside of Hanoi. Vòng village has been known for its cốm for centuries, and the village’s farmers have developed a special technique for roasting and pounding the rice to produce Cốm Hà Nội.

Cốm quickly became popular in Hanoi and the surrounding areas. By the mid-20th century, the dish had spread to all parts of Vietnam and is now one of the most popular desserts in the country.

Main ingredient

The main ingredient in Cốm Hà Nội is young, immature rice grains. The rice grains are harvested when they are still green and have not yet fully ripened. The rice grains are then roasted over charcoal and pounded into a fine powder.

There are 3 types of Cốm that attract many tourists to enjoy, including

– Early-season cốm: soft, flexible, and thin seeds, suitable for vegetarian meals or eaten with banana peppers. This type of cốm is made from young sticky rice at the beginning of the season.

– Mid-season cốm: often used to make bánh cốm  (green sticky rice cake).

– Late-season cốm: Seeds are quite thick and large, a bit hard to eat. This type of cốm is suitable for making xôi (sticky rice) with cốm.
