Bánh Đậu Xanh – Special Specialty of Hai Duong Province

Bánh Đậu Xanh also known as Vietnamese mung bean cake, is a traditional specialty of Hai Duong Province.

History

Hai Duong Bánh Đậu Xanh has been known to many people for more than 100 years and is associated with the story of King Bao Dai (1913-1997). Once upon a time, King Bao Dai visited the land of Xu Dong, and the people here offered a cake made from green beans, sugar, and fat. The king found it very delicious and praised the cake for its light, sweet, smooth flavor and for being very suitable for drinking tea. 

 King Bao Dai, after returning to the palace, issued a decree praising Hai Duong Bánh Đậu Xanh and printed the image of “Golden Dragon”, the symbol of the King’s Authority, on the cake box. Since then, Hai Duong Bánh Đậu Xanh has had a new name: “Hai Duong Golden Dragon Bánh Đậu Xanh”. That name is still Hai Duong’s own brand to distinguish it from Bánh Đậu Xanhs in other provinces.

Main ingredient

The cake is made from pureed fresh green beans with sugar and vegetable oil. 

It will then be cut into small square pieces and wrapped in aluminum foil or specialized oil-absorbing paper to limit the grease that causes boredom when eating.
