Noodle soup is a rich culinary product in the creativity of Vietnamese people. Along the S-shaped strip of land, noodle soup dishes in each region create a unique dish in that region’s culinary culture. In Bac Lieu Province, there is a type of noodle soup that is considered a specialty of this land called Bún bò cay (Spicy beef noodle soup).
History
According to local people, Spicy beef noodle soup was created by two Chinese chefs. Initially, this dish was only used to relieve hangovers for officials after nights of excessive drunkenness. However, it is its rare deliciousness that has attracted many diners and become famous in Bac Lieu.
Specialties
The broth is simmered from pork or beef bones and coconut water so it is very rich and delicious. Beef is marinated with spices such as cinnamon powder, turmeric powder, curry powder, garlic, ginger, galangal, lemongrass, and cashew oil.
In addition, squeezed orange juice is an indispensable ingredient in this dish. Orange helps the beef become more tender and adds flavor. Beef and ingredients are mixed together and stir-fried. Coconut water and lemongrass are also added to create aroma.
Because it is spicy beef noodle soup, chili will play the main spice of this spicy dish. The type of chili used must be ớt sừng (goat horn pepper).
When enjoying this dish, people dip the tender beef with 1 cup of lemon chili salt before starting to enjoy the spicy beef noodle dish. After the tip of your tongue has been stimulated, you slowly feel the spicy taste of the broth mixed with rice vermicelli, basil, coriander and the crunchiness, chewiness, and fat of the beef.
According to local people, enjoying a bowl of spicy beef noodle soup after getting drunk will achieve the best flavor. At this time, the spiciness and heat of chili in the bowl of the soup will make the pores full of sweat, creating a refreshing feeling for the whole body.
