Bún đũa also known as Chopstick Noodle Soup, is a traditional dish of Old Town Thanh Nam, Nam Dinh Province. The name “chopstick noodle soup” comes from the white noodles as big as the tip of chopsticks, like the noodles of the South. The noodles are softer but still retain their chewiness and are not mushy and can last all day. Although it is not a very sophisticated dish, with its own family-secret seasoning method, it creates a special flavor that can only be found in Nam Dinh.
In March 2022, along with Phở, Bún đũa Nam Định was also honored in the list of “100 Vietnamese Specialties 2020 – 2021”. The fact that a simple dish is honored is not only recognized but also contributes to promoting the cuisine and culture of Thanh Nam land.
