Also known as Halong Squid patties, is a familiar dish on the dinner trays of many coastal families. However, not every place creates exceptionally delicious patties. History
This is a traditional profession that dates back to 1946. Mr. Tai Le – a chef serving domestic and international tourists in Hon Gai (French colonial period) is considered one of the first people to prepare chả mực.
Specialties
Most of the ingredients to make chả mực are caught in the waters of Quang Ninh. If you want chả mực to be crispy when eaten, you must pound them by hand, form them into bite-sized pieces, and fry them in a pan of boiling oil.
Quang Ninh chả mực is best when eaten with white sticky rice. There’s nothing better than spoonfuls of fragrant sticky rice mixed with the rich, greasy taste of the hot patties. Accompanying the plate of squid rolls is a bowl of pure dipping sauce with a little pepper or, more simply, a little sweet and spicy chili sauce.
