History

According to the articles about Southern cuisine by writer Son Nam, he wrote that ancient Southern people used available ingredients around the house or in the fields to prepare delicious dishes. Mr. Mai Van Lung – the owner of Ẩm thực Phong Điền restaurant (No. 168, Nhon Loc hamlet, Phong Dien town, Phong Dien district, Can Tho city), came up with the idea of Gà um dâu dish, then he and chef Nguyen Hoang Vo, both of them created this unique delicious dish.

Dâu da (Burmese grapes) is one of the famous local fruits, making up the number one specialty brand of this region and this is also the main ingredient to make Gà um dâu dish. The ripe dâu da season starts around the beginning of lunar April and finishes at the end of June. Dâu da Hạ Châu has a sour and mild sweet taste, and when eating, it brings an extremely attractive feeling to diners. In addition, this fruit also becomes a gift for relatives and friends.

People fry chicken and garlic in an oil pan until they turn slightly yellow. Then, people mix dâu da and sugar together until their mixture creates a dark yellow sauce.

In the next step, people mix well and add spices to the mixture of fried garlic, dâu da sauce, and dâu da. Finally, they put all the above ingredients and chicken into the pot and cook one more time.
