There are two main types of noodles salted and non-salted (sweet), so they can be processed into different dishes. The salted noodles are used to make fried or stir-fried dishes. On the other hand, unsalted noodles are often used to cook chè (sweet soup). Each bowl of mì sụa usually has noodles, grilled ribs or grilled chicken, char siu, seafood or pork bone, satay… Depending on the diners’s needs, they can order dishes accordingly.

Fresh salted noodles will be lightly scalded in hot water and then stir-fried with a variety of vegetables, mushrooms, seafood, pork, and chicken, then served with a cup of soy sauce or sweet and sour fish sauce depending on taste.
