Phở Chua Bắc Hà – The Quintessence of The “White Plateau” in Vietnam

Phở Chua Bắc Hà, also known as Bac Ha Sour Pho, is one of the specialty dishes of Muong Khuong Town, Lao Cai Provine, Vietnam. The first impression of phở chua is the pho noodles. Pho noodles are slightly brown, unlike other places where they are white because they are coated with special local red rice, grown in Lung Phinh commune. According to people, this type of rice is very hard when cooked, but when made into pho noodles, it is soft and fragrant.

History

Phở chua was originally a typical dish of the Tay ethnic people. Over time, phở chua has become a favorite dish of all ethnic communities in Bac Ha. It has surpassed the limit of a typical national dish and become a famous dish in a region.

– Sour sauce: Green Mustard grown on the plateau is harvested and then pickled. The broth is made from vegetables soaked in fermented sugar water and other spices to make a sour sauce to eat with pho noodles.

– Add some warm, freshly coated pho noodles, char siu pork, chopped raw vegetables, peanuts, and finally a little sour water. Before eating, you should add a little salt because sour pho will be a bit bland compared to everyone’s general taste.
