History

Original tào phớ of Hanoi cuisine

Tào phớ is a popular summer snack loved by all ages, not only in Vietnam but also in Asian countries. The origin of this name is unknown, but some people believe that it comes from “tofu” in China.

The craft of making tào phớ also has its craft village. An Phu village (now in Nghia Do ward, Cau Giay district) is considered the birthplace of this dish in Hanoi. Currently, diners can find many tào phớ shops in this area.

Specialties

In three regions, people call this dish by different names.

  • Tào phớ Hanoi is made from fresh soybeans that are soaked, ground, and then boiled. The resulting liquid is then filtered and cooled, causing the tofu to form. Tào phớ is then served in a bowl with a light broth made from sugar water marinated with jasmine. 
  • In the central region, this dish is called “đậu hủ”. Tofu is added with a little crushed ginger, or sliced and put on top of tofu.
  • In the south, this dish is called “tàu hủ”, usually adding coconut milk. Many dishes made from “tàu hủ” were also born from here, such as bubble tàu hủ, caramel tàu hủ, tàu hủ served with jelly, lotus seeds…
