Xá Bấu – A Sweet Daikon Dish of Southwest Region

History

This dish originates from the Tieu people in Chaozhou region of China. They evacuated to live in the Southwestern provinces of Vietnam, so the culinary culture with many new dishes was also brought with them, including Sweet Xá Bấu

In Chinese, Xá bấu means pickled daikon. The way to make this dish is not too complicated with ingredients only including daikon, salt, and granulated sugar. 

In the first step, people wash the daikon, marinate it with salt, and dry it in the sun. In the next step, they marinate the daikon with fine-granulated sugar and let it marinate for a few days. 

After processing, the daikon will gradually shrink into dry strands with a characteristic taste of sour and sweet. In Soc Trang, there are many daikon growing areas. From October to the first lunar month is the time to harvest daikons, the local people will buy them to prepare Xá bấu.

In addition, qualified xá bấu products are exported to Hong Kong, Singapore, and China, bringing economic benefits to people.

Xá bấu has a mild sweet and salty taste with a delicious aroma. In addition to eating Xá bấu, people also fry it with eggs, making the dish more delicious and unique.
